Hunt Or Gather

One of the best ways to start creating a more vibrant community is by rebuilding the local food economy. Strengthening our local food economy protects local farms while encouraging and supporting new farmers. As consumers, we should invest in local farmers who are producing food in ways that nurture our environment as well as our communities.
We know that if we shorten the path from food production to food consumption, our community will benefit; Colorado Springs will become healthier if people understand where their food comes from. The goal of “Hunt or Gather” is twofold: to provide access to local, chemical-free food that is fresh and healthy; and to educate our community about the benefits of fresh, healthy, local foods.
We are working with local greenhouse farmers such as BIO Herbs and More, Pikes Peak Urban Gardens, Joyful Noise, & AVOG as well as our CFAM vendors to keep us stocked with the healthy items we have come to love. We anticipate having winter greens such as kale, swiss chard, winter spinach and a selection of fresh herbs from the greenhouse as well as root vegetables such as parsnips and carrots. We will continue to provide as many organic chicken eggs as possible but the chickens get cold too and they lay fewer eggs in the winter so thank you in advance for your understanding and support. We anticipate having new items such as bulk grains, beans, flours as well as pork products and possibly goat. Venetucci farm grass-fed beef is available by the quarter, half and whole cow order and is a great way to have a supply of humanely raised beef for the winter months! Share the cow with family, friends and neighbors!
Now is the time to stock up on preserved summer produce from producers such as MM Local, and preserves from Modern Gingham, jams from Sweet Izzy’s, salsa from Par’s Natural Foods and Ela Family farm dried fruits and fruit butters. If you have the dark, cool space to store items like potatoes, onions and squash they will last for months and provide you with hearty options for winter soups and roasted vegetables.
The Hunt or Gather Buying Club is also a great option for buying bulk produce at this point in the season. Deliveries will become less frequent once December is here but you can still order local items, meats, cheese and preserve what you can for the long winter ahead. At Hunt or Gather, we’re proud to offer our customers Sweetwater Bison meat as a healthy, sustainable (and fresh and delicious!) option. The Rogers family of Colorado Springs began raising bison in the Sweetwater Valley near Glenwood Springs in 1993 with a philosophy of raising the animals in a more natural and historic habitat. The bison are 100% grass fed (no exceptions), free of chemical contamination and allowed to roam the ranch in true bison fashion. The result is a high-quality, richly flavored lean meat that is high in protein and Omega 3 fatty acids and low in fat and saturated fat.
Bison’s low fat content means it can easily dry out when cooking, so if you’re substituting it for beef, remember to adjust cooking times accordingly. It is particularly suitable for low-and-slow cooking methods such as a roast in a slow-cooker or ground in chili. Combined with onions, parsnips, carrots, potatoes and seasonings, it makes a hearty winter stew for the cold days ahead.
