Venetucci Farm Livestock Program – Holistic Land Management

At Venetucci Farm we believe a healthy farm is a diverse farm, with a combination of plants and animals, mirroring the natural environment as much as possible. Animals need plants and plants need animals. Both play a vital role in maintaining healthy soil, the foundation of the farm ecosystem. Our farm family includes humans, vegetables, native plants, wildlife, fowl, and livestock, including Tamworth hogs and Angus cows. We believe in raising both vegetables and animals in a way that respects and restores natural systems, attempting to work with nature rather than against her.

We believe that animal impact is important for the regeneration and continued health of the land. At Venetucci Farm and Pinello Ranch we are working to re-establish healthy grass/alfalfa pastures, which improve soil fertility, hold moisture, and sequester carbon. Each spring we purchase cattle to assist in this process. The hormone, antibiotic-free cattle spend the last six months of their lives helping us maintain healthy pastures with their manure, urine, and hoof impact through intensive, rotational grazing. We also raise heritage breed hogs, which are bred, born, and raised on Venetucci pastures. The animals are moved frequently to fresh pasture to ensure adequate forage, consistent impact, and to prevent overgrazing.

Both beef and pork can be purchased in bulk or individual cuts. Bulk purchase requires a larger payment up front but results in a lower per pound cost.

The cows are harvested in October and processed at the Ranch Food Direct processing facility in Colorado Springs and ready for pick up in mid November. Beef can be purchased in quarters, halves or wholes. Hogs are butchered throughout the year and can be purchased in halves or wholes when available. We are now taking bulk beef orders for the 2015 season.

HOGS/PORK

venepigsWe farrow, feed, and finish our hogs on pasture, where they have access to fresh air, good forage, sunlight, and plenty of space for exercise. Tamworths, known for their lean meat and tasty bacon, are a hardy heritage breed well suited for pasturing year round. Our hogs are working hogs. In the late spring they are put out on fields of oats, barley, or triticale, where they happily graze, root, run and play. In the fall they are moved to harvested pumpkin, potato, or corn fields. While working as the cleanup crew, they continue to root and play, helping till and fertilize as they go, reducing weeds and improving soil fertility – the natural way.

Hog Bulk Prices – Prices Subject to Change

Half $3.15/# hanging weight plus processing.
Whole $3.05/# hanging weight plus processing fees.

$100 deposit is required for bulk purchase

Hanging weight is typically between 150- 180 pounds, which yields approximately 125-145 pounds of retail cuts (weights are approximations). Final price cannot be determined until animal is hanging.  Processing fees include: $50.00 slaughter fee plus .70cent/pound for standard processing and packaging, 70cent/pound for curing bacon and hams (no nitrates or nitrites), 40cent/pound ground sausage. Purchasing a whole hog will allow you some say in how it is processed. The processing will be slightly higher if you choose boneless cuts, brats and/or links. If you order brats and/or links, at least 25 pounds of pork must be used for these cuts and will result in an additional $1.40/pound processing fee. Farrowing happens spring, summer, and fall.

Towards the goal of restoring Venetucci Farm to health, we are working to establish healthy grass/alfalfa pastures, which improve soil fertility and sequester carbon. Each spring we purchase cattle to assist in this process. The hormone, antibiotic-free cattle spend the last six months of their lives helping us develop healthy pastures with their manure, urine, and hoof impact through intensive, rotational grazing. The cows are moved 2-3 times per day to fresh pasture to ensure adequate forage, consistent impact, and to prevent overgrazing.

The cows are harvested in October and processed at the Ranch Food Direct processing facility in Colorado Springs. Beef can be purchased in bulk (halves or wholes) or individual cuts. We are taking orders now for quarter, half, and whole cows.

A bulk purchase gives you a sampling of all the cuts (ground, steaks, roasts, soup and stew meat), which if purchased individually range from $6 to $17.00 per pound.

Hanging weight averages 500-600 pounds, which yields about 300-400 pounds retail cuts (weights are approximations). Final price cannot be determined until animal is processed and boxed.

A bulk purchase gives you a sampling of all the cuts (ground, steaks, roasts, soup and stew meat), which if purchased individually range from $6 to $17.00 per pound.

Final price cannot be determined until animal is processed and boxed.  Processing is included in the price of the cow, the only additional cost is box fee of $2 per box. A quarter cow is packaged in 3 boxes and fills approximately 4 cubic feet of freezer space. Quarters and halves will be processed according to a standard cut sheet.

Purchasing a whole cow, allows you some say in how it is purchased. There is an additional cost for boneless cuts (new york strips, filet mignon, etc) and plastic shrink wrap. The ground beef is processed lean, 90/10, unless consumer specifies otherwise.
